Smokin’ Caesar Potato Salad
1 lb (450 g) baby red potatoes, cut in half
2 tspFajita Seasoning
1⁄2 cup celery or green onions
1 recipeCaesar Dressing, prepared
2 eggs, cooked and sliced
Better Than Bacon Topper, to taste
- Place potato halves in a Multipurpose Steamer, sprinkle with seasoning, and microwave, covered, for 6–8 minutes, until potatoes are fork-tender.
- Place potatoes and celery in a large bowl. Add dressing and eggs. Toss to mix evenly and top with Better Than Bacon Topper.
- Serve warm or refrigerate until chilled. Salad will keep for up to three days in fridge.
